github and sharing course work for job search (portfolio)

I have talked to a number of individuals in my area (Colorado, USA) who put a high degree of their hiring process in being able to view individuals programming work via posts like through github, etc. as part of a 'portfolio'. Are there restrictions for what can and can't be shared publicly on course work? What is the best practice for this?
